Eri's Healthy Muffins

Healthy muffins made with no sugar! This simple recipe will yield 12 muffins and will be super moist with no oils added. Try these out for a super healthy snack!

In a bowl combine and mix:

- 3 bananas (ripe)

- 2 eggs

- 1/2 cup Greek yogurt (substitute any flavor, I prefer plain)

- 1/3 cup honey

- 1 1/2 cup almond flour

- 1 tbsp baking powder

- 1 tbsp vanilla extract

- 1 tbsp cinnamon

Fill into muffin cups and top with blueberries, raspberries, strawberries, nuts, chocolate or carob. Be creative and add any of your favorite healthy toppings.

Optional - you can add chopped walnuts to the mixture for some added texture and crunch.  

Bake at 350 degrees for 20 minutes, cool and serve!
